Mondays call for cake, so let me introduce these Rock ‘n’ Choc Bakes…

I remember baking rock cakes in primary school, and hating them. I’m not sure what it was that I disliked so much but for years I wouldn’t go near one. Today is a different story, but perhaps that’s because I have an awesome recipe that involves chocolate – and let’s face it, anything with chocolate is bound to be better!

225g/8oz self-raising flour

A pinch of salt

75g/3oz butter

1 tbsp caster sugar

1 egg, beaten

4-5 tbsp milk

100g/4oz chocolate chips (I used dark chocolate)

50g/2oz raisins

2 tbsp demerara sugar

Rock 'n' Choc Bakes

Firstly, preheat the oven to 200 degrees whilst you get on with the prep, as it should only take you 15 minutes.

Sift the flour and salt into a bowl and then add the butter in. Rub the ingredients together until the mix resembles fine crumbs, and then stir in the sugar.

Add the egg and however much of the milk you need to make a soft mixture, and lightly knead in the chocolate chips and raisins.

Create 12-14 small balls of the mixture and place onto the baking sheet.

Bake for 12-15 minutes until golden, and sprinkle sugar onto the bakes for finishing touches.
