I love baking, and as I haven’t done any in a while I thought I would try out this great recipe I found on BBC Good Food. It’s so simple and the results are amazing.
All you need is:
- 200g self-raising flour
- 1 tsp baking powder
- 1 egg
- 300ml milk
- knob of butter
- 150g of blueberries
- sunflower oil or a little butter for cooking
- golden/maple syrup or honey
You need to mix the flour, baking powder and a pinch of salt into a large bowl, and make a well in the middle of the bowl to pour in the milk and beaten egg. Mix the ingredients altogether to make a smooth batter, and then add the melted butter and half of the blueberries.
Heat the oil/butter in a non stick frying pan, and drop a large tablespoonful of batter into the pan. I used a small pan and made 1 pancake at a time, cooking each side for about 3 minutes to ensure they were thoroughly cooked and golden.
I served them with honey as a healthier alternative to maple syrup and then decorated with blueberries. Yum!
